The limit of one earth shield only applies to shields cast and active in the same instance. For PvP you can cast an earth shield on a teammate before he enters a battleground, and another one when already in the battleground. Also, if a teammate buffed with a shield enters a battleground while you do not, you can cast another earth shield without removing any shields. If the person you cast the second shield on enters the battleground, both will stay up, so you can buff your entire team in this way. Play around with instance barriers, you can find more ways to get more uses out of the shield without it removing any!
